干贝,又称瑶柱、干瑶柱、元贝、珧柱、江珧柱、江瑶柱等,通常是由扇贝科和江珧科贝类动物的闭壳肌,即新鲜的“贝柱肉”干燥而成。捕捞回来的贝类需要经过清洗、人手取肉、灼熟、烘干、生晒才能制成一颗颗的干贝。

Scallop, also called Yaozhu, Gan Yao Zhu, Yuan Bei, Jian Zhu, Jiang Yao Zhu, etc. It’s usually the adductor muscle of pectenidae and pinnatidae shellfish. It is made from drying fresh “shellfish meat”. The harvested shellfish need to be cleaned, hand-selected, burned, dried, and sun dried to become proper Dried Scallops.

A1:  挑选干贝需要注意的是品质,气味和口感。选购的时候要注意看干贝的颜色。表面呈金黄色,掰开来看,里面是金黄,或略呈棕色的就是新鲜的标志。

其实,瑶柱也是干贝,干贝就是瑶柱,就是存在品相的好差、口感好差的区别,叫法不同,东西分等级,就好像咱们买衣服,都是衣服,有的几十元,有的上千元,如果是自己吃,记住一分价钱一分货,千万不要贪便宜。

Yaozhu is scallop, scallop is Yaozhu. They are just different names for Dried Scallops. However, they are graded according to their quality. It’s just like clothing and apparel, some of them are inexpensive and some of can cost thousands of dollars. Just remember, you get what you pay for.

A3: 如今我们能买到的干贝主要来自中国、日本、越南及俄罗斯,不同水域的养分和温度,产出瑶柱的品质和味道也有差异。日本干贝价格较高,国产干贝性价比较好,越南干贝价格较低,但越南干贝无论色泽和味道均比国产瑶柱稍逊一筹,纤维较重,口感亦较硬。

Scallops in U.S. markets are mainly from China, Japan, Vietnam, and Russia. The quality and taste of Scallops are different due to the nutrients and temperatures in different waters. The price of Japanese Scallops is higher, the price of domestic Scallops is moderate, and the price of Vietnamese Scallops is lower. Vietnamese Scallops are slightly inferior in color and taste than the domestic ones, the fibers are thicker, and the taste is not as delicate.

市场上通常以日本北海道干贝为上品。由于北海道地理位置优越(位于北纬约 45度的寒带),水温环境等因素有利于帆立贝生长,贝肉不但能累积丰富营养,肉质更是清甜,加上日本加工瑶柱的工序繁复严谨,出产的干贝受到北海道帆立渔业振兴会及北海道渔联等机构进行监督和检验。

Scallops from Hokkaido, Japan are usually the best in the market. Due to the superior geographical location of Hokkaido (cold ocean zone about 45 degrees northern latitude), the water temperature, environment and other factors are conducive to the growth of Yesso Scallops. Its meat accumulates rich nutrition and therefore tastes sweet. In addition, Japan’s processing procedures are complicated and strict. The Scallops produced are supervised and inspected by institutions, such as Hokkaido Fanli Fisheries Development Association and Hokkaido Federation of Fisheries.

相信你一定不想看到精心挑选的食材,最终变成一碗邋遢的食物「心病」,也不想白白浪费几小时的时间。

没有人是天生的烹饪天才,食材处理、操作手法等都有可能直接影响到最后的结果,大家不妨根据下面的经验慢慢摸索。

I’m sure you don’t want to see your carefully selected ingredients turn into a mess, and you definitely don’t want to waste hours of your time. Very few of us are a natural cooking genius. Food preparation and cooking methods directly affect the results. Here are a couple of recipe suggestions:

 

A4: 花胶瑶柱海鲜粥

A4: Seafood porridge with Scallops & Fish Maw

材料:大米100g、糯米50g、鲜虾8只、花胶1只、瑶柱15个,白胡椒/料酒/葱花/盐/姜丝按个人喜好酌量加即可。

Ingredients: Rice 100g, glutinous rice 50g, fresh shrimp 8pcs, fish maw 1pc, Scallops 15pcs, white pepper, cooking wine, scallion, salt, and ginger can be added as desired.

步骤:

1.花胶提前浸泡一夜,12小时左右。瑶柱浸泡10分钟。切小条状待用。

2.锅中加热水,放入鲜虾、加料酒焯水待用。

3.米和水大概1:7比例,花胶、瑶柱一起放入米中。顿煮30分钟,时间到后开盖,入鲜虾和姜丝、盐。

4.接着小火煮10分钟。取出后再撒入葱花,用白胡椒粉调味。

Directions:

  1. Soak the fish maw overnight for about 12 hours. Soak the Scallops for 10 minutes. Cut them into small strips.
  2. Add hot water in the pan, put fresh shrimp into the boiling water, parboil them with some cooking wine.
  3. Prep rice and water about 1:7 ratio, mix fish maw and Scallops with the rice. Heat for 30 minutes, add shrimp, ginger, and salt.
  4. Simmer for 10 minutes. Remove from heat and sprinkle with scallion and white pepper.

 

A4: 瑶柱鲜虾瘦肉粉

Rice noodle with Scallops, shrimp & lean pork

材料:粉丝100g、鲜虾8只、瘦肉50g、瑶柱15个、 白胡椒/料酒/葱花/盐/姜丝按个人喜好酌量加即可。

步骤:

1.粉丝提前煮散。瑶柱浸泡10分钟。待用。

2.锅中加热水,放入鲜虾、加料酒焯水待用。

3.粉丝、瑶柱、瘦肉一起放水中。煮10分钟。时间到后开盖,入鲜虾和姜丝、盐。

4.接着小火煮5分钟。取出后再撒入葱花,用白胡椒粉调味即可食用。

 

Ingredients: Rice noodle 100g, shrimp 8pcs, lean pork 50g, Scallops 15pcs, white pepper, cooking wine, scallion, salt, and ginger can be added as desired.

Directions:

  1. Boil the rice noodle. Soak Scallops for 10 minutes.
  2. Add hot water in the pan, put shrimp into the boiling water, parboil them with some cooking wine.
  3. Add rice noodle, Scallops and lean pork into the water and heat for 10 minutes. Add shrimp, ginger, and salt.
  4. Simmer for 5 minutes. Remove from heat and sprinkle with scallion, season with white pepper.
