渔家在扇贝捕捞上来后,人工去壳、去裙边和胃,只取中间最鲜美的贝柱,入沸水蒸煮。在蒸煮的过程中,只加入7%的食盐,提调出贝柱的鲜味,待水再次沸腾,就立马捞出,沥干水分。处理好的贝柱,在海场中自然晾晒至九成干,变成干贝,然后直接封装入袋,将海味锁鲜。

每次使用前,只需提前用水将干贝泡软,让干贝充分吸收水分即可,还可加点姜片来去腥。泡发干贝的清水不宜过多,否则干贝的味道就会淡了,建议将干贝和清水的比例控制在1:5左右

讲究一点的,可以用黄酒、姜、葱隔水蒸软后再烹制。
